Napoleon's Bakery Cornbread is made with wholesome ingredients and baked fresh in Hawaii. It has been a popular item for over 35 years at Napoleon's Bakery locations across the Hawaiian islands. Cornbread is a true American classic. It does not contain yeast, and is not in the same category as sandwich or rustic crusty type breads. Cornbread is considered a quick bread, which in modern times, contains a leavening agent to give it lightness.

The Origins of Cornbread

Corn has been a staple ingredient among the Native Americans, who created the first version of what today is known as Cornbread. Originally cornmeal was stone ground which resulted in a course texture and heavy bread. With the introduction of industrial mills, a finer texture meal or corn flour was produced. Early settlers then introduced wheat, eggs and milk which transformed the bread into a softer version. In more modern times, the addition of leavening agents such as baking powder, and other ingredients such as butter, buttermilk, sour cream, vegetable oil and sugar, has contributed to the many varieties of cornbread we enjoy today.

Many Ways to Serve Cornbread

There are two major preferences of cornbread, depending on what part of the country you grew up in. Some like it heavy with just a touch of sugar with a hearty texture. Others like it light and fluffy and sweet, similar to a cake texture. Napoleon's Bakery Cornbread is the light, fluffy and sweet style of cornbread. You can serve it many ways. As a morning pastry with your coffee or a glass of milk, it will give you a great start to your day, or as a side dish to a hearty soup or stew for lunch or dinner.

A special way to serve it is to make it into a decadent dessert. Slice a piece of cornbread in half, spread softened butter on the bottom of both slices. Pre-heat a saute pan on medium low heat, and place the cornbread buttered sides down in the pan. Grill it until you get a nice, crisp brown finish on one side. Remove the pan from the heat (turn off the heat). With a spatula or a pair of tongs, place the grilled side of the cornbread facing up in a serving bowl and add a scoop of vanilla ice cream to each half. Top the ice cream with your favorite Sundae topping or fruit compote and don't forget the whip cream. You can be creative and come up with your own favorite way to enjoy this cornbread.
