Cornbread is a true American classic. It does not contain yeast, and is not in the same category as sandwich or rustic crusty type breads. Cornbread is considered a quick bread, which in modern times, contains a leavening agent to give it lightness. <h3>The Origins of Cornbread</h3> Corn has been a staple ingredient among the Native Americans, who created the first version of what today is known as Cornbread. Originally cornmeal was stone ground which resulted in a course texture and heavy bread. With the introduction of industrial mills, a finer texture meal or corn flour was produced. Early settlers then introduced wheat, eggs and milk which transformed the bread into a softer version. In more modern times, the addition of leavening agents such as baking powder, and other ingredients such as butter, buttermilk, sour cream, vegetable oil and sugar, has contributed to the many varieties of cornbread we enjoy today. <h3>Many Ways to Serve Cornbread</h3> There are two major preferences of cornbread, depending on what part of the country you grew up in.
