Tasting Notes Cordon Negro Brut is a crisp, clean and well-balanced sparkling wine. The fresh palate of apple, ripe pear and bright citrus flavors combine with a long finish and an exciting touch of ginger. This brilliant, versatile cava goes well with just about everything&nbsp; Food Pairing Pair Freixenet Cordon Negro Brut with anything from Eggs Benedict to seafood, such as lobster or bluefin tuna. It is also the perfect pre-prime rib cava selection for oyster, caviar&nbsp;or sushi appetizers. Winemaking Harvested by hand, the selection of ripening grapes in Freixenet's vineyards reaches across the span of several months. From the end of August for the harvest of the warm weather Macabeu grapes, through the beginning of October for the higher elevation Parellada variety, the&nbsp;winemaker awaits the perfect time to gather each bunch, letting the vines tell him when they are ready. The first fermentation is nurtured in stainless-steel tanks at controlled temperatures between 57°- 60°F. Exclusively initiated from their own Freixenet cultures, the first fermentation is introduced into the tanks. After 10 to 12 days, the wine is racked and clarified as the blend is readied for bottling. The secondary fermentation finds the bottles of Cordon Negro cradled in the perfectly chilled caves for up to 18 months.

This is my favorite sparkling wine is Cava from Catalonia. If you like dry wine and sparkling wine, this is the one !!!  Much better than Proseccos and all those... so sweet Moscatos and expensive Champagnes. My husband is diabetic and I can swear you that with this one, we can share a bottle in special occasions, and it has minimal impact in his blood sugar. I am so glad that we can enjoy this. The taste of Barcelona in a bottle. And if you are invited to a party, take it with you for a gift, everyone will love it.

Great price

For the price, this is an excellent champagne. It is slightly dry and not as sweet as some others you might have had, but it has a pleasant, refreshing taste with no aftertaste. I am not fond of sweet wines or champagnes, but my wife is. So the lack of a familiar sweetness means my wife is not a fan of this, but i absolutely love it. Highly recommended.

If you are looking for a mildly sweet champagne, I can highly recommend the Cook's California Brut found here at Sam's. Enjoy!

[This review was collected as part of a promotion.] it's my favorite because it is extra dry so it is not too sweet, even though you can feel a little apple taste, it is not sweet. I like to have in Sundays morning a glass of champagne to star the day.
