Tasting Notes Cordon Negro Brut is a crisp, clean and well-balanced sparkling wine. The fresh palate of apple, ripe pear and bright citrus flavors combine with a long finish and an exciting touch of ginger. This brilliant, versatile cava goes well with just about everything&nbsp; Food Pairing Pair Freixenet Cordon Negro Brut with anything from Eggs Benedict to seafood, such as lobster or bluefin tuna. It is also the perfect pre-prime rib cava selection for oyster, caviar&nbsp;or sushi appetizers. Winemaking Harvested by hand, the selection of ripening grapes in Freixenet's vineyards reaches across the span of several months. From the end of August for the harvest of the warm weather Macabeu grapes, through the beginning of October for the higher elevation Parellada variety, the&nbsp;winemaker awaits the perfect time to gather each bunch, letting the vines tell him when they are ready. The first fermentation is nurtured in stainless-steel tanks at controlled temperatures between 57°- 60°F. Exclusively initiated from their own Freixenet cultures, the first fermentation is introduced into the tanks. After 10 to 12 days, the wine is racked and clarified as the blend is readied for bottling. The secondary fermentation finds the bottles of Cordon Negro cradled in the perfectly chilled caves for up to 18 months.

[This review was collected as part of a promotion.] This cava was absolutely yummy for our Saturday date night. It had the right amount of flavor and was dry yet refreshing. I’m normally a Prosecco girl, but this was definitely delicious paired with some cheese.

[This review was collected as part of a promotion.] Very easy drinking Spanish Sparkling Cava, not too sweet or dry, just prefect in the middle. Highly enjoyable.  Made under the traditional method, or méthode Champenoise, you just simply can't beat the over-all value of this excellent product.  Find this a lot softer and mellow compared to a lot of local Sparkling Wines in this price range.

[This review was collected as part of a promotion.] I am surprised I liked this sparkling wine as much as I did. I stay away from dry wines at all costs. Im usually more of a fan of Rose and other fruitier sweeter wines (sparkling wines as well). I didn’t hate this one even tho I went in fully expecting to hate it. It is dry but not to the point its offensive to the palate like others. It worked so well for mimosas. I bought another one to take with me to my friend’s bday party this weekend.

It’s light and accessible- I feel like I could get down on the whole bottle (but I won’t)!! This is my favorite out of the line!

I have not tried anything from this brand so I was curious to try it. It was more expensive than I anticipated but it wasn't crazy. We opened the bottle on Christmas Eve to kick off our celebration. At first I didn't find it to have too much of an after taste but then I noticed it more the more I sipped. It was decently dry for a sparkling wine, maybe a tad sweet and almost a hint bitter but it wasn't bad. We drank the whole bottle so clearly not horrible! Lol
I'm a champagne snob so not sure I'd repurchase for myself but I definitely would for a gift!

I would use this for mimosas or topping off cocktails. It’s dryer and less sweet than a Prosecco too.  If I had to, I would I drink it on its own too.

[This review was collected as part of a promotion.] I was not a fan of this 1. I have tried a lot of different proseccos and cavas. This one was too bubbly and the flavor was off. It tasted like it almost got too warm while shipping.
