At Dehesa del Carrizal, our artisanal production process is carried out entirely on the farm under strict quality controls. From harvesting to aging, every phase is carefully managed: the grapes are selected and handled with precision to preserve their integrity and quality, fermented in tanks suited to their characteristics, and aged in carefully chosen French oak barrels. The final blend, the result of rigorous selection, seeks balance and complexity. This multi-varietal blend brings together the best of each grape variety in a blend that reflects the richness of the vineyard. With each harvest, we select the most outstanding varieties: the intensity of Syrah, the freshness of Tempranillo, the smoothness of Merlot, and the structure of Cabernet Sauvignon. Its six months of aging in 500L barrels and foudres. After aging in oak barrels, the wines continue their evolution in the bottle, perfecting themselves over time. The different grape varieties are vinified separately, and the wine is aged for an extended period (around 8 to 12 months, depending on the vintage) in new and 1, 2, 3 and up to 4 years old, selected French oak barrels, which helps achieve a round, complex, and balanced profile.</p> <h3>Serving Recommendations</h3> <p>Recommended serving temperature is typically around 16°C (61°F) to 18°C (64°F)</p> <h3>Company History</h3> <p>In the Montes de Toledo mountains, near the Cabañeros National Park , Dehesa del Carrizal has a history marked by passion and respect for the land . It all began in 1987, when the doctor and businessman Marcial Gómez Sequeira founded this winery with a bold vision: to produce unique wines in a region with no winemaking tradition. Two years later, in 1989, our first wine was born, a Cabernet Sauvignon that laid the foundation for our commitment to excellence. Over the decades, we perfected our work until, in 2006, we achieved the Vino de Pago designation, the highest recognition in Spanish viticulture , which certifies the uniqueness of our terroir and the quality of our artisanal winemaking, carried out entirely on the estate.</p>
