Caymus Special Selection Cabernet Sauvignon, 750 ml

Caymus Special Selection Cabernet Sauvignon has aromas and flavors which can only be achieved through “hang time”—a technique which chances the loss of crop if early winter sets in. Leaving the fruit to “hang” on the vine unusually long develops suppleness, increases color and matures the tannins of the grapes. The wines are abundant in textural tannins yet soft as velvet. Crop thinning, allowing measured sunlight to reach the vine’s fruit zone, and waiting for increased ripeness are all part of the viticultural practices. Caymus Cabernet is approximately 75% valley floor and 25% Hillside. Made from grapes farmed in 8 of Napa Valley’s 16 appellations, Caymus Cabernet offers a wide array of aromas and flavors including cocoa, cassis and vanilla. Peak drinking period is within 10 years of vintage year. Each year, we set aside the best French oak barrels of our Cabernet Sauvignon from Napa Valley to produce Special Selection. The special selection is chosen by a blind taste test and drawing from that vintage our favorite wines of the year and separating those and aging them in barrels to be special selection. Our favorite varies in where the grapes originated from within the Napa Valley. This wine is not produced in difficult years. Distinguished by extremely fine, velvety tannins and enjoyable upon release or with aging. A wine of structure with intense concentration of supple flavors and dark fruits leading to a deep ruby color. This wine was also honored with the highest average score rating by the same magazine over the last 15 years. <h3>About Caymus</h3> Caymus Vineyards is located in the center of the Napa Valley. Primary production is Cabernet Sauvignon grown on low-fertility soils on both the valley floor and the mountains that surround the valley. Attention to viticulture details, some dry farming, high-density plantings (with some blocks spaced as close as meter x meter), thinning of the yield, along with healthy vines and harvesting at an elevated degree of ripeness – all of these elements produce a unique and singular style of Cabernet. While the wine has sufficient tannins and structure for long-term bottle aging, Caymus Cabernet is dark and concentrated, with ripe, luxurious, fruit-driven softness that shows from the day of release. <h3>History</h3> The name Caymus comes from the Mexican land grant known as Rancho Caymus, given to George Yount in 1836. This land ultimately became the town of Rutherford and much of the surrounding area that is used to make the Caymus wine now. Chuck Wagner and his late parents, Lorna and Charlie Sr., opened Caymus Vineyards in 1972, starting off with 240 cases of Cabernet Sauvignon. Today Caymus produces 65,000 cases and farming grapes remains the priority with the family farming about 350 acres of choice Napa Valley land. Caymus is still 100% family-owned and run, as the next generation takes on the responsibility of this farming and winemaking operation.
