What is the History of a Tostada?

The word tostada means toasted in Spanish, but in food terms, the tostada refers to the flat and crunchy deep-fried corn tortilla. Traditionally, frying the tortilla into a tostada was a way to avoid wasting a tortilla that wasn't fresh enough for your tacos. The corn tostada shells that are purchased commercially, like these Mission tostadas, are similar in consistency and flavor to a tortilla chip. The tostada can be served as a companion food to soups or other dishes, but it can also be used in many Mexican and Tex-Mex recipes.
