This is a delicious firm tangy cheese. Taste like a a Cabernet flavored goat cheese but it is firm like a cheddar. As it sits it gets softer yet it's still Cuts Like a cheese to put on a cracker

Didn't like.

Expecting a wine taste, the taste was rather bitter, not pleasant for my wife and I.   Others my enjoy it but it not even close to the Merlot that was offered in the past.
