<h3>Flavor Profile</h3> <ul>  <li><strong>    <ins>Flavor:</ins></strong> Notes of buttery caramel, mild spices and a touch of smokiness</li>  <li><strong>    <ins>Aroma:</ins></strong> Oaky agave</li>  <li><strong>    <ins>Finish:</ins></strong> Sweet orange peel, white pepper, and Marzipan finish</li> </ul> <h3>Process</h3> <p>A selection of double-distilled white tequilas that are crafted using 8–12-year-old 100% Blue Weber Agave that is grown in volcanic soil and handpicked at peak maturity are blended together then matured in French oak and new American oak barrels for no less than six months. A touch of smokiness, which is imparted by the finishing process. Dedicated jimadores harvest each agave piña by hand – a tradition passed down from generation to generation. Jimadores are key to identifying the quality and maturity of our agaves for peak harvesting. The agave is grown almost a mile high above sea level in mineral-rich volcanic soil in the heart of Tequila Valley and is comprised of two parts (the Penca and the Piña). The cooking of the piñas for our core expressions takes 36 to 40 hours in masonry ovens and helps refine the taste of our tequila. This cooking method is steeped in tradition and intended for slow roasting, known to extract rich flavors through a slower conversion and caramelization of sugars. The roasted agave plants are then roller milled to extract the liquid for fermentation. Fermentation helps to convert the agave’s sugars into alcohol. Our process takes approximately 40-50 hours and is carried out in stainless steel closed fermenters. For dessert, caramel flan, dulce de leche treats, spiced chocolate, and grilled pineapple or plantains echo the tequila’s sweet and toasty finish.</p> <h3>History</h3> <p>A 220-year-old tequila recipe, 1800 is named after the first year in which our tequila was distilled and aged. 1800 has remained true to its values of passion, hard work, and honesty. Hand-harvested from many of the original Weber blue agave fields, 1800 Tequila history honors the place it comes from and the dedicated jimadores who harvest it in the highlands region of Jalisco, Mexico. Our bottles are an ode to the Mayan pyramids found throughout Mexico. The bold trapezoidal shape, like the history of tequila, withstands the test of time. 1800, the original Super-Premium 100% agave tequila, is named after the first year in which our tequila was distilled and aged.</p> <h3>Sustainability</h3> <p>1800 Tequila reuses, recycles, and repurposes 100% of the agave plant and is committed to creating a better, more sustainable future for agave. Most of 1800 Tequila’s agave waste is transformed into compost and used back in the agave fields. 1800 Tequila also re-disperses any additional agave fiber throughout the community to support local artisans, providing them with sustainable materials to create items such as paper, lotions, handbags and more. Treating water stillage from the production of tequila is critical in order to keep the surrounding environment safe from pollution. We are one of the few distilleries that have invested in a stillage treatment plant, which allows us to process about 2 million liters of stillage per day and make it safe to return to the water system. The majority of tequila producers are polluting our waterways making this a huge environmental issue.
