<p>The Augason Farms® Hard White Wheat Pail (40 lbs.) is a 6-gallon pail with a handle and airtight sealed lid. It is a long-lasting product that is great for both everyday use and emergency food storage.</p> <h3>What Is the Shelf Life of the Wheat?</h3> <p>The shelf life is about 30 years, but it varies and is affected by certain factors such as temperature and moisture. This long shelf life makes it a great emergency food supply. All pails come with an airtight seal and have oxygen absorbers that remove all oxygen in the pail for greater preservation over long periods of time.</p> <h3>How Should the Wheat Be Stored?</h3> <p>All wheat inside the Augason Farms Hard White Wheat Pail should be kept in a cool, dry place, ideally at temperatures between 55° and 70°F. Heat will shorten the storage life of the wheat. Make sure to keep in cooler temperatures for longer storage life. Make sure to utilize the airtight sealed lid, and keep the wheat secure when storing.</p> <h3>If the Pail Gets Dented, Will the Quality Suffer?</h3> <p>It is normal for pails to receive small dents as a part of normal wear and tear. Small indentations also can occur from air pressure changes when changing altitudes. These&nbsp;indentations are not an issue as long as the seal has not been broken at the bottom or top of the pail. All pails come with an airtight seal and have oxygen absorbers that remove all oxygen in the pail for greater preservation of the wheat over long periods of time. I just ordered my second bucket. After searching locally for a good wheat to grind for homemade wheat bread and coming up empty handed, I bought a bucket from Sam's (a little skeptically, I admit). I was pleasantly surprised. The wheat grinds up beautifully and makes a lovely, soft loaf. Its coming in a storage bucket just adds icing to the cake!

Great Bread Wheat

I have always bought Montana Prairie Gold wheat for milling and bread baking, but when I found that none was available, I ordered this. I’m so happy I did. My bread rose higher and had better texture than I have ever gotten. It also had better flavor than I ever got from Prairie Gold. And the price is right. This is my new go-to wheat.

Better than Gold

I wanted to learn to make very good bread - - so I purchased a home grain mill.  Next challenge; how to get enough grain to 'practice' without going broke.  This product is the perfect answer.  Clean & dry, makes perfect bread flour for great tasting bread.

We purchased this product after calling Auguson Farms and verifying with them that it is GMO free, and were very pleased. The wheat berries appear fresh and clean, and milled beautifully. We made tasty healthy bread that turned out very well :) It was shipped promptly and came right to our door! They come in a sealed bucket, so should remain fresh if you buy extra for the future, with a 30 year or more shelf life, unopened, about a year, if opened. Hope this review was helpful :)

good product

I never baked with hard white wheat before. The flour was a little more granular than what I get with hard red wheat, and I found that it works better with a little more moisture. I love Augason Farms wheat. It is clean and nicely packed. Be aware, though, it's in a six-gallon bucket, and it doesn't fit under the bed. So switch something out and put it in the pantry. It's worth the effort.

a new way to bake with whole grain

I buy this regularly and love it. Unlike some other brands of grains, there are no pieces of stem or hulls mixed in. Highly recommended.

Good price, good service, fast shipping

I have only made one loaf of bread so far, which turned out great. The moisture content might be a bit higher than what I've gotten from bulk bins before, ( I may have just overloaded my mill)and I had minor back-up in grinding. There was also a tiny bit of chaft that I picked out. I've only used one of the forty pounds, so that bit on top might be all there is. Definitely want to get screw top lid replacement or break in to smaller packages for frequent usage.
