Recipe: Organic Spinach Salad with Grilled Corn, Strawberries and Feta

What You'll Need:

  • 1 bag of Organic Spinach (16 oz.)
  • 1-quart strawberries, sliced
  • ¾ cup feta
  • ¾ cup smoked almonds
  • 1 cup charred corn

Dressing:

  • 1 tablespoon honey
  • 2 tablespoons Dijon mustard
  • 1/3c red wine vinegar
  • ½c olive oil
  • 1 shallot, minced
  • Salt & pepper

How to Make It:

  1. In a small bowl whisk together honey, Dijon, vinegar, and shallot until emulsified. Season with salt and pepper.
  2. In a large bowl toss together Organic Spinach, strawberries, feta, smoked almonds, and corn. Add dressing, toss and serve.
