Rainbow coffee beans are roasted in small batches to ensure freshness. Francisco Davila, owner and master roaster, grew up in Colombia where his ancestor, Don Pedro Davila established coffee farms in the Huila region in the 1800's. For several generations, this family of "cafeteros" has taken advantage of the climatic conditions of the Andes Mountains near the equator where a year-round stable climate provides an optimal growing environment for coffee. It is this consistent mild temperature and ideal mix of sun and rain that results in the high quality coffee that Colombia is so famous for. Francisco "cups" samples of each crop to select only the best organics and fair trade coffees.

With his discerning sense of smell and taste he puts the beans through a rigorous selection to ensure that only the highest quality Arabica beans are brought to his state-of-the-art roastery in historic Charleston. As Francisco describes, "In the morning the clouds come through the window and gently wake you as crystal tears roll off the leathery leaves of the coffee trees. The rainbow is present where there is both sun and rain. It begins in the mountains of Colombia and reaches Rainbow Row in the port of Charleston, South Carolina."
