BBQ Pork-Puffed Pockets

BBQ Pork-Puffed Pockets
Prep Time: 30 minutes · Cook Time: 15 minutes · Servings: 8

These puff pastry treats pack a powerful munch.

Ingredients
  • 2 lbs. Byron’s Pork BBQ
  • 1 pkg. (17.3 oz.) puff pastry sheets, thawed
  • 2 cups shredded pepper jack cheese
  • 1 large egg mixed with 1 Tbsp. water
Cooking Instructions
  1. Heat BBQ according to package directions and keep warm. Preheat oven to 400ºF.
  2. Line two baking sheets with foil and set aside.
  3. Working with one pastry sheet at a time, roll it out on a lightly floured work surface to an 8x12-inch rectangle. Cut the pastry into four 4x6-inch rectangles. Repeat with the second pastry sheet.
  4. Place about 1/3 cup BBQ mixture onto 1/2 of each square and top each with cheese. Working with one rectangle at a time, brush the edges with water and fold the pastry over the filling. Crimp the edges with a fork to seal and place on a baking sheet. Repeat with the remaining rectangles. Brush the tops of each pastry with the egg wash and bake until golden brown (about 20 minutes).
  5. Serve warm.

Meatball Jalapeno Poppers

Meatball Jalapeno Poppers

Ingredients
  • 13 jalapeños, stemmed
  • 1 pkg. (8 oz.) cream cheese, softened
  • 13 Casa di Bertacchi® fully cooked meatballs, thawed
  • 13 slices uncooked bacon, cut in half
Cooking Instructions
  1. Preheat oven to 375º F.
  2. Slice each pepper in half lengthwise, remove seeds and rinse. Spread cream cheese in each jalapeño half.
  3. Cut each meatball in half. Place a meatball half, cut side down, on top of cream cheese.
  4. Wrap a half slice of bacon around each stuffed jalapeño and secure with a toothpick.
  5. Place on a baking sheet and bake 25 – 30 minutes, or until bacon is browned.
  6. Serve immediately on a platter.

Ingredients
  • 3-1/2 to 4 pounds coarsely ground beef
  • 14-1/2 ounces beef broth, canned
  • 3 Tbsp. onion, finely chopped
  • 1 tsp. garlic powder
  • 3 tsp. instant beef bouillon granules, divided
  • 8 oz. tomato sauce, canned
  • 2 Tbsp. paprika
  • 1/2 tsp. black pepper
  • 1/2 tsp. cayenne pepper
  • 4 Tbsp. chili powder
  • 1 Tbsp. cumin
  • 1/4 tsp. onion powder
  • 1/4 tsp. salt
  • 1/4 tsp. sugar
  • 1/4 tsp. garlic salt
  • 1/4 tsp. instant chicken bouillon granules
  • 1 Tbsp. lime juice
Cooking Instructions
  1. Cook beef in large skillet over medium heat, stirring to crumble until beef is browned; drain.
  2. Place cooked beef, chopped onion, beef broth, tomato sauce, chili powder, paprika, cumin, two teaspoons beef bouillon, garlic powder, cayenne pepper and black pepper in stoneware.
  3. Cover; cook for 7 to 8 hours on Low or 3 to 4 hours on High.
  4. Stir in remaining beef bouillon, onion powder, salt, sugar, garlic salt, chicken bouillon and lime juice.
  5. Cover; cook for 1 hour.

Try this tasty cherry twist on a tailgating classic.

Ingredients
  • 1 lb. lean ground beef
  • 1/2 red onion, chopped
  • 10-3/4 oz. can diced tomatoes
  • 2 Tbsp. Worcestershire sauce
  • 1/2 cup ketchup
  • 1 clove garlic, minced
  • 1 cup pitted cherries, chopped
  • Salt and pepper to taste

OPTIONAL:

  • Up to 1/4 cup brown sugar
Cooking Instructions
  1. Partially brown ground beef, adding salt and pepper to taste. Drain fat.
  2. Place meat in the Crock-Pot® slow cooker. Add remaining ingredients and stir well.
  3. Cover; cook on Low for 4 to 6 hours or on High for 2 to 4 hours. Remove lid and stir. Add seasonings as desired.
  4. Serve on hamburger buns or over rice.

Additional info

If you use a very lean beef (95%+ lean) you can skip the browning step and place all ingredients in the Crock-Pot® slow cooker at once. Just use a large spoon to break up the meat. Cover; cook on Low for 6 to 8 hours or on High for 4 to 6 hours. Stir well and ensure the meat is fully cooked before serving.
