For busier locations the top tray allows for one bag to start preheating while the other is dispensing. Cabinet will maintain the cheese at serving temperature. The 3 buttons can be set to desired portion control or manual flow. Little cleaning is necessary. With the Peristaltic Pump there is virtually no waste. Cheese dispenser doesn't have to be turned off every night. As long as it is left on, the cheese may remain in the dispenser for up to 4 - 5 days.
