Epicurean cutting on ECS surfaces will reduce dulling your knife so you will sharpen less. This means less work for you and longer life for your knife. Surface will score slightly which shows it is protecting the knife's edge. Epicurean Cutting Surfaces® are extremely durable and require no oiling or bleaching. ECS maintenance-free cutting surfaces resist staining and are easily cleaned in the dishwasher. Heat-resistant up to 350° (176°C) so you can use the surface as a trivet without leaving a blemish.
