Gruyere is an earthy, cow's milk cheese with a nutty and fruity flavor. Gruyere originated before the 12th century and features an inedible, light brown natural rind. Its hard texture is peppered with tiny round holes. It pairs well with a Rhone, Pinot Noir or Cabernet Sauvignon and is PDO (Protected Designation of Origin) certified.
