These Merlot grapes are cool fermented for a slow process that retains aroma and complexity. A regimen of pump-overs extracts soft tannins and color from the grapes, then grape skins are pressed before reaching dryness to preserve a lush tannin structure. Aging on American oak enhances the richness and complexity. Serve with roasted leg of lamb, grilled fennel, Charcuterie or scallion and brie stuffed burgers.
