Recipe for Smoked Salmon Chipotle Chowder
2 Tablespoons Butter
2 Tablespoons All-Purpose Flour
1 Large Sweet Onion, Chopped
1/2 Chipotle Chili, Minced
4 Cups Chicken Broth
2 Cups Corn
1 Teaspoon Salt
1/2 Teaspoon Pepper
16 oz. Smoked Salmon, Gently Flaked into Pieces
1/4 Cup Milk
1 Can of Diced Potatoes
Melt the butter, stir in flour, and keep stirring until the butter and flour combine. Add onion, and continue stirring. Cook on medium heat, tending it for 1-2 minutes, until onion turns opaque.
Stir the minced chili into the broth, and pour the mixture into the pot. Stir to break up any clumps. Once it reaches a boil, reduce to low heat, add the corn, and season to taste. Cook, stirring frequently for about five minutes. Add the milk and smoked salmon. Stir, and cook over low heat, until the salmon and potatoes are warmed through.
Serve hot with crusty bread!
